RECIPE: Auntie Biz's Potato Salad
8 new potatoes
4 tbs. lime juice
4 tbs. canola oil
sea salt
1/2 tsp. paprika
2 celery stalks with tops, finely chopped
2 tbs. minced parsley
4 hard-cooked eggs, chopped
1 cup mayonnaise
3 tbs. Balsamic vinegar
Boil potatoes until tender when pierced with a fork. Peel, slice, and dice. Toss with lime juice, oil and salt to taste. Cool. Add paprika, celery, parsley, and chopped eggs. Blend mayonnaise with vinegar and then, toss over salad, gently folding until all pieces are coated.
